15 Minute Banana/Oat Cookies with Chocolate Chips

Every morning the little munchkin throws her sweet potato all over the kitchen and I spend 15 minutes cleaning up the floors, chairs, tray, her face and her hands. It’s a good thing she’s cute. I am not sure how I ever thought that my child would be a neat eater. It’s not possible.

It’s been one of those weeks that I’m too tired to do anything but survive the day (is it only Wednesday?). I was making my oatmeal this morning when I forgot there was no ‘sprinkle top’ on the cardamon. After an absent minded ‘sprinkle sprinkle’, there went the bottle of cardamon and there went my oatmeal. Fail.

So… I did what I often criticize my mom for letting my sister do… I ate dessert for breakfast. At least it was an oatmeal cookie which If I breakdown Is just like baked oatmeal (right?). I make these cookies whenever I’m trying not to eat refined sugars or just when i’m super stressed from sleep training and my cup of tea isn’t working. They’re the simplest ‘cookies’ ever. Feel free to add your own additions, subtractions, whatever.

p.s. you get a solid 10-11 ‘cookies’ out of this recipe so feel free to cut the recipe in half. You can use half an egg by cracking an egg and using 2 tbsp.  instead (scrambled eggs tomorrow?).

15 Minute Banana/Oat Cookies with Chocolate Chips


  • 1 Banana
  • 1 cup of rolled oats (you can also use quick cooking)
  • 2 tsp. cinnamon
  • 1 egg
  • 2 tbsp. coconut (flaked or shredded)
  • pinch of salt
  • 1/2 tsp baking soda (makes them fluffier-optional)
  • 1/4 cup chocolate chips or a little bit of each (optional)
  • Maple Syrup or Honey


  • Preheat oven to 325.
  • Mash the banana and add the remaining ingredients up to the honey. The batter is very wet. Scoop with an ice cream scoop onto a greased cookie sheet and bake for 10 minutes. After ten minutes drizzle the cookies with a little bit of maple syrup or honey. I use a honey bear for easy drizzling and a knife or brush for the maple syrup. bake for 5 more minutes. Devour immediately.
  • Note: if you don't finish them initially you can keep them in a container in the fridge on a paper towel but they start to get a little 'wet' the longer they sit.
