Banana Oat Blender Waffles

Woah. I’m super behind. I went to Utah last week to turn my family into vegetarians… jk. That wasn’t intentional, nor will it stick. As I was serving ‘Chipotle Bowls’ for dinner one night, my sister said, ‘Where’s the chicken?’ I told her to put cheese on it if it was really bothering her. She did. NBD.

Anyway, I was really feeling waffles one morning but the dishes were too bothersome. Thus, I tried my usual blender pancake recipe in a waffle iron & It worked. Delicious, nutritious, gluten free, dairy free, and sugar free, waffles in pinch.

My Mom, Celine, and I enjoyed them with a spread of things: fresh berries, chia seed maple syrup, strawberry chia jam, and almond butter. Top yours with whatever your fancy. A waffle truck in Utah tops theres with Biscoff Spread… oi… sounds so good.

Banana Oat Blender Waffles

Ingredients

  • 1 1/4 cup oats
  • 3/4 cup almond milk (preferably homemade) (You can also use yogurt)
  • 1 egg
  • 1 banana
  • 1 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla

Instructions

  1. Heat a waffle iron.
  2. Meanwhile, Put everything into blender and pulse until smooth.
  3. Fill your waffle iron with the batter until all the little grooves are filled. Close the waffle iron and use patience while cooking as the batter is runnier than traditional waffle batter and it may stick otherwise.
  4. Serve with berries, bananas, peanut butter, chia seed maple syrup, or strawberry jam.
  5. Alternatively, you can use the same recipe for pancakes!
