We are super excited for the Easter Bunny to come. Every year, my husband and I take turns hiding eggs for each other. I stuff the eggs, hide them, he finds them, hides them for me, I find them, and then we get to eat them! It was the best tradition between the two of us but now that we have a little nugget, things will be a little different and so much more fun.
Unfortunately, our egg hunt will have to wait as we will be unpacking our lives for a second time this year, come Sunday. Until then, i’ll be reminiscing (hard) on last years Easter celebration.
-Side note- Why don’t stores sell Easter outfits for cold weather? These dresses aren’t going to cut it.
I invited a couple of friends over for a potluck Easter Brunch and went with a ‘green’ theme for the table.
I made these amazing pancakes (subbing GF flour) for my Brunch dish and adorable little treats for the kiddos with brown rice cereal and white chocolate. I also had mini glasses filled with this Green Smoothie for the guests to grab as they walked in.
If you’d like to make them yourself all you need to do is make a batch of rice crispy treats, cut them into shapes using cookie cutters.
Place a lollipop stick into each one, temper some white chocolate and add food coloring, and dip! I let the chocolate harden and wrap each one in a plastic baggy and ribbon. Voila.
If I COULD have my own easter brunch this year I would probably make adorable parfaits, Carrot Cake Pancakes in the shape of bunnies from this Cooking Channel Easter show,
and Make a frittata with egg whites, lots of fresh zucchini, and pesto, to be extra green and beautiful!
