Every year, on the first day of Spring, my friend’s sweet husband brings her flowers. They’re not just ANY grocery store flowers, they’re Mark’s Garden Flowers… which are just the most beautiful flowers on earth. Isn’t that the sweetest thing? I melted for her. Every husband should follow suit, I’m convinced.
Spring training is about to end and baseball season is about to begin. We are two weeks out and I don’t think C will want to leave. We discovered the aquarium last week and I’m beginning to think that we should’ve bought an annual pass. If we could go daily, we would. She’s mesmerized.
When she’s not staring at fish or crushing my favorite cookie between her hands she’s grabbing at anything I’m making. It’s so cute that it’s okay.
I often crave Oatmeal Craisin Cookies. I tried some ridiculous ones at the Malibu Farmers Market from Lydia’s Kitchen and I cannot, for the life of me, figure out how they make them. These will have to do. They’re a twist on my previously posted, Banana Chocolate Chip Cookies. They’re fast, guilt free, and yummy.
If you find my choice of pan funny that’s fine. When you are traveling and you only bring one baking sheet and one frying pan, you don’t have much of a choice. Here I tried to make them into bars instead of round cookies. No reason. I just felt like eating squares instead of circles
Just like the 15 minute Banana Oat Cookies, banana’s and oats are the main ingredients. The difference is the coconut flour and craisins. Add whatever you like if you don’t like craisins.
Raisins, more coconut, and pecans would make a lovely ‘cowboy cookie-esque’ twist to them. One bowl and fifteen minutes later you will be satisfying your sweet tooth completely guilt free.
p.s. If you don’t have coconut flour you can sub all purpose flour.

15 Minute Banana Craisin Cookies
Serves 1, GF
- 1 tbsp coconut flour
- 1 tbsp coconut (any type)
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup rolled oats
- 1 mashed banana
- 1 egg
- drizzle of honey
Preheat the oven to 325. Whisk together all of the dry ingredients in a small bowl (until the rolled oats) then stir in the mashed banana, 1 egg, and craisins. Spoon onto a greased or lined cookie sheet and smash them with your hand to spread them out. Bake for 10 minutes, drizzle with honey, and bake again for another 2-3 minutes. Cool and eat for breakfast or to-go snack.
If you would like a vegan option you can sub applesauce or a flax egg for the egg and use maple syrup or agave for the honey.
