Meringue Wednesday

I’m currently referring to my mother as, ‘the nice lady’. After this weekend, that’s how I imagine C sees her Indian grandmother. I let my mom put C down for a nap one day and 20 minutes later they were out by the pool. Not napping, clearly. Apparently, my mom couldn’t stand the crying and Grandma’s can’t be bad guys.

A couple of things before we get to the Meringue part of today:

-My 17 year old sister schooled me in the art of photography, social media, and how to wear colors besides black, white, and blue. She’s funny, takes beautiful picture’s of strawberries,  and she’s single!

-She is also going to kill me for saying that. Sorry little star.

-I thought C disliked her new bedroom/just wanted to sleep with me all of the time. Really, she’s had an ear infection for who knows how long. She never cried, just tugged at her cute little ear. Poor thing. Who feels like a bad mom? Me, right here. Sorry, sweet thing.

-I’m having a tough time deleting songs for space from my Itunes.  It’s tough to do. Too many songs, too many memories. Girls just wanna have fun?

-I apologized to an old friend for being such a bum. It only took two years. Better late than never.

-Speaking of friends… I miss my old friends. I’ll go out on a limb here and name them. Besties: Choice, Shafia, Maitlyn, Nikki, Alex J., and Jordan. I miss you. What happened? It sounds like I’m talking about an ex boyfriend but really, when you lose a good friend doesn’t it seem like you just got dumped by an ex?

-I’ve decided I HAD to have retained water pregnant. How my face ever got to be so large for one minute and small the next baffles me. Water. Retention. I blame you.

-Green Smoothies for breakfast and dinner, because I can. Oh, and I’m making an effort to eat at ‘Flower Child’ once a day because this is the best place since True Food Kitchen. If ever in the Phoenix area… ch ch check it out.

-My sister and I made meringues and discovered that the batter makes the tastiest ‘milk mustache.’

-We baked them and served them with greek yogurt and berries. Yes, I said greek yogurt… we were out of whipping cream and completely butchered our ‘Coconut Milk Whipped Cream’. It happens.

– incase you want the recipe, we used Ellie Kriegers recipe as a base but omitted the chocolate and almond extract. We added vanilla extract and turned them into pavlova’s. My sister, as a self-proclaimed food critic said, ‘If I think they’re good, they really are good.’

Meringue

3 egg whites
1/4 teaspoon cream of tartar
1/3 cup superfine sugar (I made my own in the blender)
3/4 tsp vanilla extract

Preheat oven to 250 degrees F. Line a baking sheet with parchment paper and set aside. Place egg whites and cream of tartar in a clean, dry bowl of a stand mixer and beat until foamy. Add sugar and beat until meringues hold soft peaks, about 3 minutes. Spoon onto a baking sheet and make into round mounds. Bake for 40 minutes and remove from oven. Cool completely and remove from parchment paper before spooning in a dollop of greek yogurt (sweetened if you would like) and sliced strawberries.

note: You could even add some grated lemon zest and serve with a blueberry sauce. That would be delicious.
