The BEST Banana Blender Pancakes

My daughter took her first couple of steps today. I cried. I hesitated telling my husband, because, who wants to miss out on a moment like that? However, I did because i’m cruel and had to tell him. I’m so proud of her. Such a cute little munchkin.

I’m also pretty proud of these. Recently, I’ve given up on trying to be fancy all day errrryday. I’m trying to find ways to make food simpler without losing out on the taste.

So we have, blender pancakes. I’ve made them before, they’re usually lacking in texture and I justify them to be delicious because they saved me a bum load of time dishwashing.

These need no justification. They’re so good even my husband ate them (sans syrup or powdered sugar) and loved them. Celine will eat anything I make her but my husband is tougher to please. They take ten minutes from start to finish, given you pre heat your griddle. They’re light, fluffy, healthy, naturally sweet, gluten free, and dairy free.

The Best Banana Blender Pancakes


  • 2 ripe bananas (spotted)
  • 3 Large eggs
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp fine salt
  • 1/4 tsp nutmeg
  • 1 tbsp honey
  • 1 cup old fashioned oats


  • Place all ingredients in a blender in the order shown and blend until you have a smooth batter. Pour out onto a 300 degree griddle and flip when you see bubbles popping on top. Optionally, add blueberries before flipping (after bubbles have popped). They're so sweet you don't even need maple syrup but who doesn't love maple syrup!
  • I store them in the fridge for a couple of days and they make a great 'cold snack' or reheat nicely in the toaster!
